RICHMOND, CA – 7 Stars Holistic Healing Center hosts a weekly pop-up in partnership with Marbella Zepeda’s Vegan Vibes / Vibras Veganas. Zepeda is on a mission to create food that nourishes and educates people in the East Bay, sharing the benefits of plant-based foods in a way that is approachable, fun, and delicious. Her menu focuses on savory Mexican staples like tacos, burritos, menudo, and other plant-forward favorites.

“With everything I do I feel like it’s about giving back to the community,” says Marbella Zepeda, founder of Vegan Vibes / Vibras Veganas. “It’s about helping people change their eating habits and helping them find healthy food. I always say that you don’t have to pick between tasty and healthy, you can have them both!”

Zepeda was born in Mexico City and grew up in Oakland. After learning about the benefits of a plant-based diet, she started converting some of her favorite recipes. The first dish to become a hit and sell out was her menudo. It’s a customer favorite, especially in the winter months when the hominy, chile, and onions warm the body and soul. Her potato chorizo, chicken, and beef tacos—which are all plant-based too—were next to become crowd favorites.

Sharing plant-based foods with the community is a labor of love for Zepeda. She made the transition to eating vegan with her daughters, and creating the business helped solidify her connection to promoting healthy, humane, and eco-friendly eating. She attributes the success of her business to her parents, who were always entrepreneurial and passionate about food.

“A huge part of the business is what I’ve learned from my parents. Starting Vegan Vibes was completely out of tradition,” says Zepeda. “At first I got doubts from my family, but it’s three years later and now I have my dad helping me cook for the business. Now it’s about the next generation. What am I teaching my daughters?”

Zepeda has regular pop-ups in Richmond at 7 Stars Holistic Healing Center, Unity Park, and Jelly’s Place in Richmond. The pop-up at 7 Stars is every Friday from 12:00 p.m. to 5:00 p.m. and features plant-based tacos, burritos, agua fresca and other favorites.
